    Snikiddy Kale and Shredded Cabbage Salad

    Ingredients

    Rinsed and chopped Curly Kale
    Green Cabbage, sliced or shredded into small pieces
    Dried Cranberries
    Pepitas (Pumpkin seeds)
    Walnuts

    Instructions

    We suggest you toast your walnuts to bring out more flavor. You can do this in a pan on the stove top over medium heat or place in a 350 degree oven until the nuts start to smell fragrant. Careful not to let them go too long and burn.

    Top the salad with your favorite Snikiddy like a crunchy crouton. In the photo we used the Baked Cheddar Fries to add a little cheese to the mix.

    Dressing:

    Basic Vinaigrette

    1/4 cup white-wine vinegar
    1 tablespoon Dijon mustard
    1/4 teaspoon salt
    1/2 teaspoon pepper
    3/4 cup extra-virgin olive oil

    In a small bowl, whisk together white-wine vinegar, Dijon mustard, salt, and pepper. Slowly add 3/4 cup extra-virgin olive oil, whisking until emulsified.
