3 Tbsp Butter
2 Tbsp Olive Oil
1 large Onion, sliced
2 lbs Tomatoes, large dice
3 cloves of Garlic, minced
1 Tbsp uncooked white Rice
1 sprig of Thyme
1 Bay leaf
1 cup Water
Salt and Pepper to taste
Place olive oil and butter in a pot over medium high heat. Once butter is melted, add the onions and season with a pinch of salt. Let these cook down for a couple of minutes. You don’t want them to brown. You can stir them every once in a while to prevent this.
Now add to the pot your garlic and let it cook until it becomes fragrant. This is the point where you add your diced and cored tomatoes, rice, thyme, bay leaf and season with another pinch or two of salt.
Turn your heat down to medium to medium low. Let it continue to cook until the tomatoes are breaking down.
Add in your water, a Tbsp of butter and some black pepper. Cook for a few more minutes to ensure you rice is tender.
Remove the soup from the heat and pull out your thyme and bay leaf. Now you can puree the soup either in the blender or with a hand-held emulsion blender.
Taste the soup and do one final seasoning adjustment with salt and pepper.
